I am excited to share my recipe for my favorite homemade quinoa meal with you!
This is a really delicious recipe & one of my personal favorites, sometimes I like it with a little bit of feta, or alternatively I will have it with cubes of organic tofu.
What you need;
- 1 cup of organic quinoa
- 3-4 baby carrots
- A Handful of spinach
- A small handful of feta (5-6 small cubes) or tofu
- A slice of lemon
- 4-5 small stalks of chives
(This serves 1)
Prep time – 10 mins
Cooking time - 15-20 mins
Firstly, grab the baby carrots, spinach & chives - rinse until clean. Then get out your chopping board, finely chop up the chives, peel & slice the baby carrot, chop the feta or tofu into small squares.
Grab 1 cup of quinoa & simmer in 2 cups of water & a squeeze of lemon for 15 minutes. While your quinoa is simmering, lightly steam your baby carrots & spinach for 2-3 minutes (Check your baby carrots are not too hard, I like them to be a little soft).
As the quinoa has finished simmering, drain the remaining water from the quinoa (if there is any) and once your veggies have finished steaming, pop them with the quinoa & break up your handful of feta (or tofu) into small pieces & mix through for a minute or two. The taste of the feta spreads throughout it just a little and tastes amazing.
To finish, top it off with fresh lemon juice to taste & I like to add a little bit of truffle salt!
